Peanut Butter Chicken and Noodles

Peanut butter chicken

Serves: 3-4

Ingredients

  • Sauce
  • 18 Cup Soy sauce
  • 18 Cup Honey
  • 38 Cup Peanut butter Three heaping spoonfuls
  • 12 Cup Teriyaki sauce
  • 14 Teaspoon Ginger paste
  • 1 Teaspoon Garlic paste
  • Stir Fry
  • 1 lb Chicken cut into roughly equal size 1″ pieces
  • 15 oz combination of frozen cut carrots, broccoli florets, baby bok choi, or frozen cut green beans
  • 1-2 packages of ramen noodles without the flavor packet

Directions

  1. Combine sauce ingredients and microwave for 30 seconds. Stir and microwave for 30 more.
  2. Cook the ramen until done. Drain, but reserve a little of the water for thinning the sauce if necessary.
  3. Heat a little oil in a large skillet.
  4. Add chicken (in batches if necessary) and season with salt and pepper.
  5. Cook for 3 to 5 minutes or until cooked through. Remove from skillet.
  6. Reduce heat to medium and add remaining tablespoon of oil to the skillet.
  7. Add broccoli, bell pepper, and carrots and cook, stirring occasionally, just until crisp tender.
  8. Add chicken and noodles back into the skillet and stir to combine.
  9. Whisk stir fry sauce and pour over chicken and vegetables and stir gently to combine.
