Peanut butter chicken

Ingredients
- Sauce
- 1⁄8 Cup Soy sauce
- 1⁄8 Cup Honey
- 3⁄8 Cup Peanut butter Three heaping spoonfuls
- 1⁄2 Cup Teriyaki sauce
- 1⁄4 Teaspoon Ginger paste
- 1 Teaspoon Garlic paste
- Stir Fry
- 1 lb Chicken cut into roughly equal size 1″ pieces
- 15 oz combination of frozen cut carrots, broccoli florets, baby bok choi, or frozen cut green beans
- 1-2 packages of ramen noodles without the flavor packet
Directions
- Combine sauce ingredients and microwave for 30 seconds. Stir and microwave for 30 more.
- Cook the ramen until done. Drain, but reserve a little of the water for thinning the sauce if necessary.
- Heat a little oil in a large skillet.
- Add chicken (in batches if necessary) and season with salt and pepper.
- Cook for 3 to 5 minutes or until cooked through. Remove from skillet.
- Reduce heat to medium and add remaining tablespoon of oil to the skillet.
- Add broccoli, bell pepper, and carrots and cook, stirring occasionally, just until crisp tender.
- Add chicken and noodles back into the skillet and stir to combine.
- Whisk stir fry sauce and pour over chicken and vegetables and stir gently to combine.
