{"id":98,"date":"2011-10-03T11:43:00","date_gmt":"2011-10-03T11:43:00","guid":{"rendered":"http:\/\/exhaliastudios.com\/squirrel\/?p=98"},"modified":"2014-07-23T08:08:04","modified_gmt":"2014-07-23T12:08:04","slug":"pickled-tomatos","status":"publish","type":"post","link":"https:\/\/exhaliastudios.com\/squirrel\/pickled-tomatos\/","title":{"rendered":"Pickled Tomatos"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2011\/10\/tomatoes.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-99\" title=\"tomatoes\" src=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2011\/10\/tomatoes.jpg?resize=640%2C840\" alt=\"\" width=\"640\" height=\"840\" \/><\/a><\/p>\n<p>An embarrassment of riches this summer in the form of my very first attempt at growing tomatoes, caused me to have to search out new and creative uses for grape tomatoes.\u00a0Fresh off of pickling the few measly cucumbers that I got off of the vines before they withered prematurely,\u00a0(Still haven\u2019t figured that one out)\u00a0I decided to try out pickling the tomatoes.\u00a0This is apparently usually done with green tomatoes, but what they hey.\u00a0I found a recipe at Epicurious.com which sounded good, but I didn\u2019t want to use dill.\u00a0I was almost as successful with my basil this year as I was with the tomatoes, so I adapted it to incorporate the classic combination of basil, garlic and tomatoes.<\/p>\n<p>It\u2019s a really beautiful contrast between the white, red and green before the hot vinegar solution hits it and starts wilting the basil.<\/p>\n<ul>\n<li>3\/4 cup\u00a0vinegar<\/li>\n<li>3\/4 cup water<\/li>\n<li>4 teaspoons coarse kosher salt<\/li>\n<li>2 teaspoons sugar<\/li>\n<li>12 ounces cherry tomatoes, grape tomatoes, and\/or pear tomatoes<\/li>\n<li>4-5 basil leaves<\/li>\n<li>3-4\u00a0garlic cloves<\/li>\n<\/ul>\n<p>Place the first four ingredients in a sauce pan and heat until the sugar and salt dissolve.\u00a0Pierce each tomato with a fork and place in a 12 ounce container with the basil and crushed garlic.\u00a0Pour the hot vinegar solution over them.\u00a0Put a lid on the container and place in the refrigerator for a couple of days before eating.\u00a0I\u2019m not sure how long these last in the refrigerator.\u00a0My husband downs them too quickly.\u00a0I also tried a recipe that had half white vinegar and half balsamic vinegar.\u00a0My husband prefers the tomatoes this way, but I find it a little overpowering, and not nearly as attractive a presentation.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>An embarrassment of riches this summer in the form of my very first attempt at growing tomatoes, caused me to have to search out new and creative uses for grape tomatoes.\u00a0Fresh off of pickling the few measly cucumbers that I got off of the vines before they withered prematurely,\u00a0(Still haven\u2019t figured that one out)\u00a0I decided [&hellip;]<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"jetpack_post_was_ever_published":false,"_jetpack_newsletter_access":"","_jetpack_dont_email_post_to_subs":false,"_jetpack_newsletter_tier_id":0,"_jetpack_memberships_contains_paywalled_content":false,"_jetpack_memberships_contains_paid_content":false,"footnotes":"","jetpack_publicize_message":"","jetpack_publicize_feature_enabled":true,"jetpack_social_post_already_shared":false,"jetpack_social_options":{"image_generator_settings":{"template":"highway","default_image_id":0,"font":"","enabled":false},"version":2}},"categories":[4,1],"tags":[],"class_list":["post-98","post","type-post","status-publish","format-standard","hentry","category-cooking","category-uncategorized"],"featured_image_src":null,"author_info":{"display_name":"admin","author_link":"https:\/\/exhaliastudios.com\/squirrel\/author\/admin\/"},"jetpack_publicize_connections":[],"jetpack_featured_media_url":"","jetpack_sharing_enabled":true,"jetpack_shortlink":"https:\/\/wp.me\/p2gp05-1A","jetpack_likes_enabled":true,"jetpack-related-posts":[{"id":278,"url":"https:\/\/exhaliastudios.com\/squirrel\/isnt-borage-an-annual-and-other-lessons-from-a-first-year-garden\/","url_meta":{"origin":98,"position":0},"title":"&#8220;Isn&#8217;t borage an annual?&#8221;
