{"id":242,"date":"2011-12-01T14:12:20","date_gmt":"2011-12-01T14:12:20","guid":{"rendered":"http:\/\/exhaliastudios.com\/squirrel\/?p=242"},"modified":"2012-03-03T21:07:23","modified_gmt":"2012-03-03T21:07:23","slug":"choux-beautiful-buttery-choux","status":"publish","type":"post","link":"https:\/\/exhaliastudios.com\/squirrel\/choux-beautiful-buttery-choux\/","title":{"rendered":"Choux, Beautiful Buttery Choux"},"content":{"rendered":"<p>Also known as cream puffs, choux pastry has to be one of my favorites, especially when filled with rich mousse.\u00a0 These however, I did not make for that purpose.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"https:\/\/i0.wp.com\/jimmydean.com\/Themes\/default\/images\/products\/beauty-shots\/Jimmy-Dean-Sandwiches-Croissant-Sausage-Egg-Cheese.jpg?resize=240%2C180\" alt=\"\" width=\"240\" height=\"180\" \/>Some time ago, for a reason I can not now remember, I picked these up for my children.\u00a0 What was I thinking?\u00a0 Frozen eggs?! *shudder*\u00a0 Anyway, with the inexplicable bad taste of youth that inevitable prefers food out of a box to lovingly hand crafted dishes, they loved them.\u00a0 Since then, I have been trying to find a home-made option that will satisfy my little ones.\u00a0 Now, I am a very fond parent, and I love baking, but croissants go above and beyond what I am willing to do.\u00a0 I have made them from scratch, and perhaps now that I have a kitchen larger than a closet and am no longer having to use the top of a hot water heater as counter space, I might try them again, but make them on a weekly basis I will not.<\/p>\n<p>Biscuits would be sensible and traditional, but my children find them too dry for breakfast sandwiches.\u00a0 I had despaired and taken to buying the cursed frozen egg things at Costco from time to time as a treat.\u00a0 Then one day it hit me.\u00a0 Choux!\u00a0 If you have never made choux, you are in for a treat.\u00a0 It is a pastry that begins from a roux, can you think of anything more decadent?\u00a0 I think of the dough as essence of cream sauce. This is my recipe from my trusty old Better Homes and Garden red book.<\/p>\n<ul>\n<li>1\/2 cup butter<\/li>\n<li>1 cup water<\/li>\n<li>1\/8 tsp salt<\/li>\n<li>1 cup flour<\/li>\n<li>4 eggs<\/li>\n<\/ul>\n<p>Melt the butter in a heavy saucepan, add water and salt and bring to a boil.\u00a0 Add all the flour at once and mix vigorously.\u00a0 Continue to stir until the mixture forms a ball.\u00a0 Cool for 10 minutes and then add eggs one at a time, beating until smooth.\u00a0 You can drop spoonfuls onto a greased baking sheet as this recipe calls for, or for a more finished look, pipe the dough onto a silpat.\u00a0 Bake at 400 degrees for 30-35 minutes.\u00a0 The outsides will be golden and crispy\/flaky, and the inside, just a little doughy.\u00a0 I prefer to turn down the oven after 20 minutes to get the insides just a little dryer.\u00a0 You can remove the doughy parts before filling.\u00a0 These make a great sandwich bread for chicken salad, or you can fill them with custard, pudding or mousse.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux11.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-712\" title=\"choux1\" src=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux11.jpg?resize=225%2C300&#038;ssl=1\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux11.jpg?resize=225%2C300&amp;ssl=1 225w, https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux11.jpg?resize=768%2C1024&amp;ssl=1 768w, https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux11.jpg?w=2000&amp;ssl=1 2000w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><a href=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux3sm.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-672\" title=\"choux3sm\" src=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux3sm.jpg?resize=225%2C300&#038;ssl=1\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux3sm.jpg?resize=225%2C300&amp;ssl=1 225w, https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2012\/03\/choux3sm.jpg?w=600&amp;ssl=1 600w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>Aren&#8217;t they pretty?\u00a0 They freeze well too.\u00a0 Unfortunately the kids only give these a &#8220;B.&#8221;\u00a0 And I&#8217;ve had no requests for breakfast sandwiches since I started serving them.\u00a0 Guess I&#8217;ll keep looking&#8230; Angel Yeast Biscuits might work&#8230;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Also known as cream puffs, choux pastry has to be one of my favorites, especially when filled with rich mousse.\u00a0 These however, I did not make for that purpose.
