{"id":105,"date":"2011-10-03T12:59:15","date_gmt":"2011-10-03T12:59:15","guid":{"rendered":"http:\/\/exhaliastudios.com\/squirrel\/?p=105"},"modified":"2011-10-03T12:59:15","modified_gmt":"2011-10-03T12:59:15","slug":"fallpumpkinspumpkin-bread","status":"publish","type":"post","link":"https:\/\/exhaliastudios.com\/squirrel\/fallpumpkinspumpkin-bread\/","title":{"rendered":"Fall=Pumpkins=Pumpkin Bread"},"content":{"rendered":"<p>Fall came in with a vengeance over the weekend, and all this cooler weather has me thinking pumpkins, and pumpkins means pumpkin bread.\u00a0 This was a holiday tradition in my house, and Christmas time sees a lot of baking.\u00a0 Since I&#8217;m able to make it whenever I wish now, I do.\u00a0 This time, my three-year-old son helped me with them.\u00a0 They still came out.\u00a0 I like these muffins best smothered in cream cheese, but the doctor says I need to bring my cholesterol down, so I have to settle for butter-like (yeah right) spread.\u00a0 Sigh.\u00a0 Recipe follows the picture.\u00a0 <a href=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2011\/10\/DSCF3035.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-106\" title=\"DSCF3035\" src=\"https:\/\/i0.wp.com\/exhaliastudios.com\/squirrel\/wp-content\/uploads\/2011\/10\/DSCF3035.jpg?resize=640%2C490\" alt=\"\" width=\"640\" height=\"490\" \/><\/a><\/p>\n<p>Someday, when I&#8217;m feeling healthy, I&#8217;ll figure out how to substitute applesauce for some of the oil.\u00a0 I seem to remember you can do that.<\/p>\n<ul>\n<li>3\u00a0\u00a0 cups\u00a0\u00a0 flour<\/li>\n<li>2\u00a0\u00a0 tsp\u00a0\u00a0\u00a0\u00a0\u00a0 cinnamon<\/li>\n<li>1\u00a0\u00a0 tsp\u00a0\u00a0\u00a0\u00a0\u00a0 salt<\/li>\n<li>1\u00a0 tsp\u00a0\u00a0\u00a0\u00a0\u00a0 baking soda<\/li>\n<li>2\u00a0\u00a0 tsp\u00a0\u00a0\u00a0\u00a0\u00a0 baking powder<\/li>\n<li>2\u00a0 cups\u00a0\u00a0 brown sugar<\/li>\n<li>4\u00a0 eggs,   beaten<\/li>\n<li>1\u00bd\u00a0\u00a0 cups\u00a0\u00a0 vegetable oil<\/li>\n<li>2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 cups\u00a0\u00a0 pumpkin, solid packed<\/li>\n<\/ul>\n<p>Procedure<\/p>\n<p>Preheat oven to \u00a0 350\u00b0 F.\u00a0 Sift the first 5 ingredients in one bowl.\u00a0 Mix the rest in another.\u00a0 Add the wet ingredients to the dry ingredients, and stir just until combined.\u00a0 Pour into greased pans and bake until toothpick comes out clean.
