My son turned four this last week, and when asked what kind of cake he would like, he responded immediately and definitely, “A taco cake!” I have no idea what he thought he meant by this, but this is my interpretation. The “tortilla” is sponge cake; the “beans”, chocolate mousse; the “cheese” and “lettuce” (or if you prefer guacamole) are cream cheese frosting colored appropriately; and the “tomatoes” are dried strawberries. The taste was just as I like it, rich and not overly sweet. My son seemed to like it as well, though its look was just a bit too off-putting for my daughter. Oh well. You can’t make everyone happy all of the time, and it was his birthday. Over all I was quite proud of my ingenuity. 🙂
